I have had celiac for over 10 years. Althought I'm sorry to say I do not attend church every Sunday I have found that the communion wafers do not bother me as long as I do not get the actual bread. You may want to check your local library for books on the subject, especially cookbooks, they are very helpful. Then print out recipes on your computer you might like. Also, local Health Food Stores are very helpful. You will find gluten free bread and pasta products there. You can find corn and quinoa pastas and a lot of different kinds of breads. I find the brown rice bread to be a little heavy and sticky. There is another bread that is wonderful, tastes like sourdough bread, but I can't think of the grain that is used. I will keep checking here and give it to you as soon as I find the name. I am not a big bread eater in the first place, so I just find it in the health food store when I want bread. There is a great book for you to check out. "The Healing Foods" The ultimate authority on the curative power of nutrition by Patricia Hausman & Judith Benn Hurley. Hope this is helpful to you, as it is not an easy diet to follow.
